The meat of the German marketing company BIOPark Markt GmbH from Malchin in Mecklenburg-Vorpommern, which was founded in 1994, has no equal. The meat offered for tasting at BIOFACH 2020 was of the finest quality. The first impression alone when looking into the – let’s call them “showcases” – was promising. The “gems” were already visually appealing and for anyone who has dealt with meat to a limited extent, the BIOPark Markt GmbH booth exerted a special attraction.
BIOPark Markt GmbH is particularly concerned – and also one of the decisive driving forces behind this production and marketing company per se – that breeding, keeping and processing take place in a sustainable manner and in compliance with BIO & animal welfare standards. Only in this way is it possible to produce organic meat of such high quality with healthy, respectfully reared and kept farm animals. The photogenic meat at BIOFACH was hand-picked organic products – I was assured that this was exactly the same quality as every customer would find in an organic shop.
The guidelines of the company stipulate that only animals from organic farming may be purchased and processed, which were also fed naturally without exception. The participating farms use plant-based feed from their own production. BIOPark Markt GmbH farms do not use performance-enhancing, genetically modified products or feed of animal origin (with the exception of organic dairy products).
BIOPark Markt GmbH starts with the purchase of suckler cows, dairy cows, young bulls, old bulls, steers, heifers and slaughter calves by the certified slaughterhouses. It also provides advice and support in the procurement and sale of breeding and fattening animals for the affiliated farmers.
The company does not limit itself to cattle breeds. All breeds and crossbreeds such as Fleckvieh, Charolais, red & black Angus, Holstein, Hereforder, Uckermärker, Pinzgauer and many others are purchased and raised according to organic standards. Strict attention is paid to the fact that the farmers keep their farm animals in a manner appropriate to their species and under natural conditions. For cattle and calves, this naturally includes grazing and always enough freedom of movement for all animals.
In addition to organic beef and veal, the BIOPark Markt GmbH product range also includes organic pork, lamb and poultry. The product portfolio ranges from large cuts and processed goods for bulk consumers, retail chains, butcher’s shops, caterers and catering businesses to end-consumer cuts such as picanha, chops, steak, goulash, sausage products and much more. Of course, all organic products sold through BIOPark Markt GmbH are traceable.
Many of the affiliated organic farmers cultivate at areas in Mecklenburg-Vorpommern’s nature reserves – here the use of synthetic fertilisers is excluded and thus BIOPark Markt GmbH and its farmers contribute to the sustainable conservation of such areas. In this way, new jobs are created, particularly in structurally weak regions, and both economic and social development are promoted.
At BIOFACH I was fortunate enough to meet Matthias Päsler, who is responsible for Controlling & Sales at BIOPark Markt GmbH. Matthias took the time to tell me a little bit about the company’s philosophy, because until then I had not really noticed this marketing company for organic meat – what a sacrilege in retrospect.
After 30 minutes of talk, it was time to see if the taste and consistency of the organic meat could keep up with the visual promise. So, I decided to come back in the afternoon and that was just the right decision.
With w.Holz GmbH and its Gastronomy & Catering team, BIOPark Markt GmbH had brought its “favourite caterer” from Rostock to the trade fair – and that’s where it all started! Every minute roasted entrecôtes of beef, fillet of veal and much more passed me by and the air was filled with the “fragrance” of excellently prepared meat.
The cook Matthias Kugehl (Matze) from w.Holz Catering was responsible for everything that left the kitchen of the booth – a nice person and a real professional. Here I would like to write an article on foodadvisor about the caterer himself, or I would like to write a profile of “Matze” under the heading Meet the chef – because there was simply not enough time at the fair to exchange ideas properly.
My meat was cooked to the point, with lots of roasting aromas on the outside – even though Matze didn’t have a grill on site – medium on the inside with a slight tendency towards English – PERFECT both visually and in terms of taste! The unique taste of this high-quality meat from BIOPark Markt GmbH was breathtaking – certainly the piece of veal was not quite as strong as the beef, but this was due to the age of the animal and the lower fat content. The fat of the entrecôte had a breathtaking aroma – perfectly balanced, it was optimally marbled and a really round affair.
The Coleslaw served with it was crisp and well-seasoned, as was the classic side dish of bacon beans – any steakhouse with a good reputation would have been proud of what left the kitchen here (apart, of course, from the “grill” theme, which was due to the trade fair situation).
It’s also the little things that make the difference – the meat fortunately had no salt before and after roasting – or at least, almost no salt at all. The edge of the plate was therefore lovingly decorated with a high-quality crystal salt. So, the premium organic meat remained juicy and I was able to “configure” the salt requirement myself. Not to forget to mention the great herb butter – I would have tasted a Meggle – never use such a “butter” – a top meat needs matching topping!
So far for the very impressive culinary side of my visit to BIOPark Markt GmbH at BIOFACH 2020. Should you have the opportunity to get hold of this excellent organic meat – hit it, no matter what method of preparation you choose, you will certainly not be disappointed.
