When it comes to innovative food and unique textures, Chef Tom Köffers from Surf & Turf is a constant on Phuket. There may be many chefs who are able to convince – but Tom is able to do this with the most minimalist of requirements.
This makes it all the clearer that it is the innovative chef and his craftsmanship that brings such great dishes to our table. Fantasy and the desire to try something new combined with the knowledge of the combination of ingredients, aromas and textures makes a great chef – the gentlemen of the Guide Michelin have already “noticed” that with Tom.
Besides, Tom is also a great guy and he likes to give “the ball” back sometimes. With the “Chef’s Table – Giving Back Dinner” he has once again spoiled his regular guests with culinary delights at a low price. He wanted to give something back to the guests – who have been supporting him for a long time – and he succeeded in doing so with this culinary highlight – my respect & thanks for that.
The culinary compositions of Tom are always both – a feast for the eyes as well as the palate. He takes a lot of time to find special, rare and tasty ingredients, to combine them in an unusual way and then surprise us with the result. Who would think of preparing a piquant sauce based on watermelon – and who would be able to come up with it if you couldn’t classify the fine taste?
It was a lot of fun to exchange ideas with Tom, because there are only a few chefs who are as positive with ideas and suggestions as Tom. He embodies so to speak “open-minded” and this is certainly also part of his success.
