Bouquet, taste, and textures

A prerequisite for experiencing a culinary firework display – as well as the rat Rémy does in the legendary animated film Ratatouille knew how to make his brother Emile experience it – is the sense of taste and smell.

Of the classical senses such as hearing, seeing, smelling, tasting and touching, smelling – olfactory perception – remains by far the most important and strongest of our senses. Continue reading Bouquet, taste, and textures

Terpenes in the Food Industry: The End of Sensory Boredom

In my introductory post for Mary Jane 2025, I already got you tuned into terpenes and their use in flavoring food and beverages. Now, I want to dive deeper into my motivation behind this topic. Continue reading Why Terpenes?

FRUIT LOGISTICA 2026

Our visit to FRUIT LOGISTICA 2026 felt noticeably more relaxed than the previous year. This year featured a remarkable variety of mushrooms – presented in many different formats – some primarily from a culinary perspective, others with a focus on health benefits.

FRUIT LOGISTICA 2025

Anticipation for this year’s FRUIT LOGISTICA was high – perhaps a little too high, because expectations need to be met, and this time Friday was certainly not our best choice of day to attend. But more on that later.

HLB`s SAMBA

Great news for all papaya lovers and those who want to become one – HLB has introduced a new, very special product – the SAMBA Papaya. I have been following this impressive company since my first visit of FRUIT LOGISTICA, because papaya was not really one of my favourite fruit varieties at the time. Continue reading HLB`s SAMBA

HLB: Papaya at its best – Organic from America

At the FRUIT LOGISTICA there were all sorts of suppliers of papaya and every variety had its advantages. I had the chance to try papayas from every corner of the world. Very tasty papayas came for example from Brazil, they were quite big, nice to look at, not too firm and sweet as sugar. Continue reading HLB: Papaya at its best – Organic from America

FRUIT LOGISTICA 2022

On Wednesday, February 6, 2022, it was once again time for a long time, the FRUIT-LOGISTICA had opened its doors the day before and I had the time to drop by – even if only briefly. Noticeably more streamlined than in 2018, it was clearly to note that many exhibitors of recent years had not yet taken the courage to be on site.

FRUIT LOGISTICA Berlin

The FRUIT LOGISTICA in Berlin becomes a fruitful affair every year.

FRUIT LOGISTICA is all about fruit, vegetables, transport logistics and innovation. There is an almost infinite variety of domestic & tropical fruits and the few days that this fair opens its doors are often hardly enough to have tasted all the delicacies. Continue reading FRUIT LOGISTICA Berlin

TOMRA – Easy Sorting

At some of the trade fairs I have already visited this year, there were topics that at first glance only slightly touch on the culinary aspect, but which are nevertheless important from my point of view.

At the International Green Week 2020, for example, I have already seen many producers of new types of packaging, compostable crockery and humidification systems for the retail trade, in addition to exhibitors for food and drink. Continue reading TOMRA – Easy Sorting

WINEfair berlin 2017

At the invitation of the Aachen wine dealer Aix Vinum, we had the opportunity to take a closer look at the WINEfair berlin 2017. A fair completely to our liking – in contrast to many other fairs nowadays, we were offered all kinds of opportunities to gather our own culinary experience without having to order wise wines at once – which in our opinion should also be the appropriate credo of an end consumer fair. WINEfair berlin 2020

As I had just returned from BIOFACH in Nuremberg for the weekend, I unfortunately did not manage to visit the WEINmesse berlin 2020 on the first day of the event. On Saturday, however, the time had come and I made my way to the Messe Berlin – the entrance to the WEINmesse berlin this time was at Hall 21 in the Masurenallee. Finland

This year at the International Green Week 2020 I spent a lot of time in HALL 8.2 – especially at the Finnish stand. Reasons for this – besides the wish to learn more about the northernmost country of the EU and to write a new article on “Meet the Chef” (Teemu Kaijanen) – were mainly the relaxed atmosphere and the many natural products there.
